I LOVE food! It makes me so happy 🙂 and I tend to eat healthy, unless a bacon cheeseburger stares me down. I love salads and vegetables, and was pretty proud of those healthy inclinations until I read an article on my health insurance provider’s website (of all places!) about making salads healthier.
For the record, I have a serious relationship with Bolthouse Ranch dressing, which is DELICIOUS and low-calorie. My amazing Aunt D introduced me to it, and all of a sudden my husband and I started eating salads every day. So yes, the beautiful Bolthouse Ranch remains a staple in our HC household, but I decided to follow Blue Cross Blue Shield’s tip and make my own vinaigrette. I must say, I was SO pleased! I don’t usually love vinaigrettes, but this one is delicious and seriously healthy. Oh and super easy!
Store it in the fridge for about a week – but if you’re anything like I am (wavering self-control around deliciousness) it’ll go fast, and encourage you to eat more salad in the process!
Most vinaigrette recipes I’ve seen call for a 3:1 oil to vinegar ratio. What makes this one extra-healthy is the type of oils I use. I love flax seed oil and used to just pour it over my beloved Bolthouse dressing, but I actually mixed it into this vinaigrette! Check out why flax seed oil is a non-negotiable in my diet here.
I’m getting so hungry writing this post…I may just have a big salad with our yummy & healthy homemade vinaigrette when I finish!!
So fun disclaimer about this vinaigrette – you can make it however you like! Sub any comparable oil or vinegar, add your favorite herb, etc. My Grandma told me a long time ago that the benefit of being the chef is that you can make sure YOU like what you’re cooking 🙂
I like mixing it in a mason jar so I can easily determine how many “parts” I’m adding…meaning if I put in the flax oil first, I just make sure I put in twice as much olive oil. I’m no math whiz so if I can do it, so can you! 🙂
Healthy Homemade Vinaigrette
1 part flax seed oil
2 parts olive oil
1 part apple cider vinegar
2-3 raw garlic cloves
thinly sliced green onions (I use scissors to make them thin without smushing them!)
a little salt!
Add all ingredients and give it a good shake. I prefer to do my vinaigrette shaking while wiggling my hips and dancing/singing. It gives it a little something extra, don’t you think? 😉
And voila – you’ve made your very own healthy, homemade vinaigrette in about 5 minutes. Add it to a yummy salad and we’re good to go! Stay tuned for some of my favorite salad recipes, but in the meantime, what’s your favorite??
