Crazy-Healthy & Yummy 1-Minute Oatmeal

I wake up famished! I eat three times before 11AM on a typical day. You’d think I’m Rip Van Winkle – waking from a 20 year slumber instead of my precious eight hours – the way I reach for a banana as happily as I do for my coffee cup. I start early with my banana and an almond-milk latte, topped off with cinnamon and turmeric (the latte, not the banana). Peanut butter toast is next, around 7AM. Charlie-pup loves that part most, thanks to the peanut butter smeared on his food bowl after I’ve prepared my toast. And then, after I sit down to work, comes the oatmeal!
Now, oatmeal in the Happy Home is serious business. It contains:
• 1/4 – 1/2 cup McCann’s Quick cooking rolled oats
• 2 tablespoons Bob’s Red Mill ground flax seed
• Raw cashews
• Raw almonds• Frozen blueberries and cherries (as soon as I can buy local berries fresh at the farmer’s market, I’ll use those!!)
This won’t be groundbreaking, but all of this stuff is incredibly healthy. Good for your heart, brain, skin, hair, digestion, nerves, blood vessels, bones…and SO EASY!!! LOVE. MY. OATMEAL.

  1. Put the stuff in a bowl with high sides (vs. a wide soup bowl)
  2. Add 1/2 – 1 cup of water, depending on how much oatmeal
  3. Microwave for 1 minute
  4. Stir in almond milk & top with Penzey’s ground cinnamon

I like to enjoy a cup of tea with my oatmeal, since by that time it’s been way too long since coffee, and who doesn’t love a pick-me up with such a yummy feast? Plus, tea is also really nutritious and delicious. Win, win, wine – whoa, that escalated quickly! I find that from morning to evening, coffee, tea and wine (with dinner, when things get crazy in the ‘Dale) pair perfectly with water to keep things interesting but still pretty healthy. I try to stick to whole/pronounceable foods, and I honestly think life tastes better when we eat simply.

This oatmeal is so easy and perfect to make ahead. I take it to the office in a Pyrex on days I’m not home, and it keeps me full and satiated so I can focus on my work! It also makes me feel wonderful.

That concludes another HC Quick Tip…quick and yummy, to be precise. Oh and healthy. I got inspired to write when I sat down with my oatmeal this morning, and now I’m thinking about a second bowl….I do love food. 🙂 Hope a warm bowl of breakfast-y goodness brings you peace and joy and a happy tummy, too!
